Brunch is my favourite meal of the day. When my kids were younger every day started at 6:30 am ( weekends included). Now that my 4 sons are teenagers and adults, sleeping late on a weekend (when there are no sports games to rush out to) is a luxury that I really look forward to and enjoy. I wake up early to a quiet house, have my coffee and read in my hot tub, take my dog for a long hike and then make brunch for my family=perfect Sunday.
Ingredients
- 1 cup wheat flour
- 1 cup oats
- 1/3 cup ground flax
- 1/4 cup wheat germ
- 1 tsp baking powder
- 12 egg whites or
- 3 whole eggs
- 2 cups milk
- 1/2 cup dark chocolate chips
- Fresh berries for topping
Instructions
- In a large bowl, mix together the wheat flour, oats, ground flax, wheat germ, and baking powder.
- In a separate bowl, whisk the egg whites (or whole eggs) and milk.
- Pour the wet mixture into the dry ingredients and stir until just combined (don’t overmix).
- Fold in the dark chocolate chips.
- Heat a non-stick pan or griddle over medium heat. Lightly grease if needed.
- Pour batter onto the pan (about 1/4 cup per pancake). Cook until bubbles form and the edges look set, then flip and cook until golden and cooked through.
- Top with fresh berries and serve warm.
Notes / Tips (optional)
If the batter is too thick, add a splash more milk. If it’s too thin, add a bit more oats or flour. For extra protein, you can replace part of the milk with Greek yogurt (thin with a little water if needed).
