This is such an easy and quick high protein bagel recipe that u can make ahead and even freeze for an on-the-go breakfast.

Ingredients

  1. 1 cup any flour (i have used rice, gluten free, wheat, almond)
  2. 1 cup high protein Greek yogurt
  3. 1 egg
  4. Pinch of salt
  5. Optional topping: everything bagel seasoning
  6. Optional: cooking spray or egg wash

Instructions

  1. Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour, Greek yogurt, egg, and a pinch of salt until a dough forms.
  3. Shape into bagels (make a ring) or buns and place on the baking sheet.
  4. Lightly spray with cooking spray or brush with egg wash. Sprinkle with everything bagel seasoning.
  5. Bake for about 20 minutes, or until it's cooked through.
  6. Cool slightly and enjoy.

Serving ideas

Eat as-is, or top with a fried egg, cheese, or avocado with cherry tomatoes.

Make-ahead / freezing

Let cool completely, then freeze in a sealed bag/container. Thaw overnight or warm in a toaster/oven to serve.
